Recipe: Easy Gingerbread Cookies

Here's a fun and easy recipe to do with your kids this holiday week! This recipie is from Kraft, the secret to the delicious cookies is the butterscotch pudding in the mix. 
You can draw on the cookies with icing if you'd like... But if you have a toddler like we do, that might be hard for them. 

My suggestion is to melt some butter, brush it over the baked cookies and let your kids add Christmas sprinkles on top!

Our 3 year old had a great time cutting out the cookies and adding the sprinkles. 
What a great simple activity to do with your kids!

Recipe: Pepperoni Pizza Pasta

Here's a quick, easy, and healthy recipe for you stay at home dads! Colorful peppers make this dish as good as it looks. 


8oz Veggie or Whole wheat pasta (I use veggie pasta. Taste is very mild and its healthier than plain pasta)
1 large onion, chopped
1 large julienned green pepper
1 large julienned sweet red pepper
2 garlic cloves, minced
2 tablespoons olive oil
1 can tomatoes (stewed or diced)
4oz pepperoni, sliced to small pieces
Basil, salt, and pepper to taste
4oz  mozzarella cheese, or other white cheese
Crushed red pepper, optional





Cook pasta according to package directions. Meanwhile, in a large nonstick skillet, saute the onions, peppers, and garlic in olive oil until vegetables are crisp-tender. Add can tomatoes and basil. Bring to a boil. Reduce heat; cover and simmer for 10 minutes, stirring occasionally.

Stir in pepperoni, salt and pepper, simmer for 2 more minutes. Drain pasta; add to tomato mixture. Add cheese and toss well. Sprinkle with pepper flakes, if desired.

Don't forget to alter the recipe to your liking. Add more or less tomatoes or cheese, and even use different peppers.

Welcome

To many times in life we lose sight of what is really important, and unfortunately most of the time it is to late when we realize it.  My wife and I took the plunge and decided to live off of one income.  We have one child that is three and another on the way.  Our goal is to create time, and enjoy life’s experiences as a family.  Time creates experiences which are the things we remember most.  The first five years of your child’s life is one of the most times you will ever be able to spend with your children, so enjoy it.
